2 fresh fennel bulbs, sliced into wedges

1 orange, zested and juiced

Method:

Preheat your oven to 200°C (390°F).

Trim the fennel bulbs, keeping the core intact so the wedges hold together.

Spread on a baking tray and roast for 30–35 minutes, turning halfway, until golden and caramelised at the edges.
