Light Potato Gratin

This lighter take on the classic French potato gratin delivers all the creamy, golden comfort you crave without the heaviness of traditional versions. Ingredients (serves 6-8):

  • 1.5kg waxy potatoes (Charlotte or Yukon), thinly sliced

  • 300ml semi-skimmed milk

  • 150ml single cream

  • 2 cloves garlic, minced

  • 50g gruyère cheese, grated

  • 2 tablespoons fresh thyme leaves

  • 1 teaspoon Dijon mustard

  • Salt and white pepper to taste

  • Butter for greasing

Method:

  1. Prepare the dish: Preheat oven to 180°C. Lightly butter a shallow 23cm x 33cm baking dish.

  2. Layer the potatoes: Arrange half the sliced potatoes in overlapping rows, seasoning each layer lightly with salt and white pepper.

  3. Create the cream mixture: In a small saucepan, gently warm the milk and cream with minced garlic, thyme, and Dijon mustard. Heat until steaming but not boiling: you want the flavours to infuse without curdling.

  4. Build the layers: Pour half the warm milk mixture over the first layer of potatoes. Add the remaining potatoes in another overlapping layer.

  5. Top and bake: Pour over the remaining milk mixture and sprinkle evenly with grated gruyère. Cover tightly with foil and bake for 45 minutes.

  6. Golden finish: Remove foil and continue baking for 15-20 minutes until the top is golden brown and the potatoes are completely tender when pierced with a knife.

  7. Rest before serving: Allow to stand for 10 minutes before serving; this helps the layers set and makes portioning easier.
