Did you know that garlic has been used for centuries as a natural remedy for colds and infections? This simple yet delicious orzo dish brings together ingredients that don’t just taste good but also help keep your body strong thanks to the combination of lemon, garlic, and spinach. It's quick to throw together, making it perfect for a weeknight meal or a meal prep favourite. Plus, it works just as well warm as it does at room temperature, so you can enjoy it fresh or take it on the go.
Ingredients:
-
1 cup orzo pasta
-
2 tablespoons olive oil

Stir in the lemon zest and juice, allowing the flavours to meld for about 30 seconds.
-
Add the spinach to the skillet and cook until wilted, about 2-3 minutes.
-
Toss in the cooked orzo, mixing well to coat the pasta with the lemon-garlic mixture. Season with salt and pepper to taste.
